Perfectly Roasted Plaintains

All you will need to make these tasty plantains is 1 pan, 2 ingredients, and 20 minutes!

Plantains, a less sweet member of the banana family, are a great source of potassium, fiber, and resistant starch a kind of carbohydrate that breaks down slowly and feeds good gut bacteria. This makes an excellent snack or side dish!

You will need:

  • 2 ripe plantains (they should be yellow with brown spots)
  • Coconut oil, melted to a liquid
  • Sea salt

Instructions:

  1. Preheat your oven to 425 degrees Fahrenheit.
  2. Peel and slice the plantains into discs.
  3. Place the plantains on the pan and lightly brush with melted coconut oil.
  4. Sprinkle with sea salt.
  5. Roast in the oven for 15-20 minutes, flipping halfway through to evenly cook.
